Ingredients

    2 T. olive oil
    4 scallions, chopped
    6 garlic cloves, chopped
    1-2 jalapeno chiles, chopped
    1 T. ground cumin
    2 15.5 oz. cans of black beans, drained, rinsed, mashed
    sea salt
    pepper, freshly ground
    1 sweet potato, peeled and grated, about 2 cups
    1 large egg, beaten
    1/2 c. dried breadcrumbs

    1/2 c. reduced fat sour cream
    juice and rind of one lime
    1/2 t. garlic powder
    1 t. chili powder
    sea salt to taste

Directions

Saute chopped scallions, garlic, jalapeno, and cumin in small pan with 1 T. of olive oil. Put in large bowl. Mix together with mashed beans, grated sweet potato, egg, breadcrumbs and salt. Form into eight patties. Fry in a large, non-stick frying pan with 1 T. of olive oil until dark brown and slightly crispy on the outside. Mix sour cream with lime juice, lime rind, salt, garlic powder, and chili powder. Top fritters with Lime Chili Sauce and serve.
