Ingredients

    6 boneless skinless chicken breast, frozen
    Olive Oil
    Tony's Creole Seasoning
    1 Green Pepper (chopped)
    1/2 Red Onion (chopped)
    2 Celery Stalks, (chopped)
    20 Baby Carrots (chopped)
    1 cup Kroger's Real Mayo
    5 Gala Apples, cored and chopped
    Salt, if desired

Directions

The night before I put together the salad, I bake the chicken breasts. I lay them in pan, frozen , and drizzle olive oil on both sides and season moderately with Tony's Creole Seasoning. Then I COVER with foil and bake in 385 degree oven for 1 hour and 20 minutes. Then I take it out and let them stand for 20 to 30 minutes. Then I put them in container and put them in the refrigerator overnight. The next day I chop them up into small bite size pieces and put them into large mixing bowl. To that I add the celery, green pepper, onion and carrots and mix it all up with the mayo. Then after mixing it up, I add the apples and mix again. Then I chill for a few hours before eating it, so the flavors will all come together into a delicious blend. I lightly salt it, but it isn't necessary.

    Incredible!
    So yummy -- great recipe! I made it with Miracle Whip light to cut down on fat, but next time I'll make it with 1/2 Miracle Whip light and half plain yogurt. I also tossed chopped Gala apples in lemon juice to keep them fresh, which added a nice kick. Any tasty chicken seasoning will do. - 7/28/10

    Incredible!
    This is a great recipe! I didn't have Tony's creole, but his herb seasoning worked great, and I used Granny Smith chopped apples doused liberally with lemon juice that I added to the rest of the ingredients before I added the mayo. This salad is great the next day too if it lasts that long! - 7/26/10

    I'm so glad you enjoyed this dish. I didn't use the lemon juice and surprisingly, the apples stayed very nice and crisp and fresh to the very end, which was 3 or 4 days later. I have never tried Tony's herb seasoning. I didn't know he had one, so thanks for the tip!
