Introduction

chop all veggies ,saute in 2 tbs olive oil , add canned diced tomatoes ,tomato juice, then shrimp and cubed mahi mahi . cook 30-45 min. serve w/ brown rice season to taste.

Ingredients

    1 large stalk celery ,chopped chunk size
    2 green zuchini cut in round slices chunk size
    2 yellow squash cut in round slices chunk size
    1.5 lbs mahi mahi ( or catfish etc....)
    2 lbs shrimp peeled & deviened
    2 tbs minced garlic
    2 medium yellow onions cut chunky
    1 1lb can of petite diced tomato's (2 cups)
    2 single serve cans tomato juice low sodium
