Introduction

Mrs. Snyder was our housemother when I lived in Acadian dorm at LSU. Once each year she would make her onion soup for all the girls on each floor. Mrs. Snyder was our housemother when I lived in Acadian dorm at LSU. Once each year she would make her onion soup for all the girls on each floor.

Ingredients

    3 T. butter
3 very large onions (I like Vidalia), sliced thin
    1 T. flour
    6 cups water
    5 t. beef bouillon powder
    croutons (optional)
    grated Swiss cheese (optional)

Directions

Slice the onions very thin and saute them in butter until golden brown. Sprinkle with the flour and let the flour brown lightly. Add the water and bouillon. Let simmer for 10 to 15 minutes. Optional: add grated Swiss cheese and croutons just before serving. Makes 6 one-cup servings, 2 WW points each for the soup only. (Don't forget to add the extra points if you add croutons and Swiss - and you'll want to!)
