Introduction

Light, airy whole wheat pancakes, as quick as instant mix. Light, airy whole wheat pancakes, as quick as instant mix.
Number of Servings: 4

Ingredients

    1 egg, beaten
    1 c. lowfat buttermilk
    1 t. vanilla extract
    2 T oil (optional)
    1 c. whole wheat or spelt flour
    2 T. flaxseed meal
    1 t. baking powder
    1/2 t. baking soda
    12 t. salt

Directions

Beat egg in bowl; add buttermilk and beat until combined. Add oil if desired, but I never use it (helps oil the griddle).
On top of buttermilk, sprinkle flour, then flaxseed meal, then baking powder, baking soda and salt. Mix with a fork until just combined; mix in 1-3 T. cool water to lighten if necessary.

Bake on nonstick griddle at 400 degrees or medium high heat. Makes 8-10 pancakes.
