Introduction

Very filling supper with lots of protein. Leavde out the cheese to save some cals. Very filling supper with lots of protein. Leavde out the cheese to save some cals.

Ingredients

    100g courgette
    100g red onion
    100g red pepper
    Quorn fillets x 2
    100ml skimmed milk
    2 eggs
    20g plain flour
    50g cathedral city cheddar cheese

Directions

Dry fry onions, zucchinin and red pepper.

Mix milk, eggs and flour together.

Put veggies in quiche dish - pour on egg mixture and top with cheese.

Bake in hot oven until set and cheese is bubbling.
