Introduction

Amazing and moist banana nut muffins. Can also be made into a bread using a bread pan. Amazing and moist banana nut muffins. Can also be made into a bread using a bread pan.
Number of Servings: 22

Ingredients

    1 stick butter or margarine
    1 cup splenda baking blend /.5 cup sugar and .5 cup splenda
    1.5 cups wheat flour
    1 teaspoon baking soda
    dash of salt
    1/2 cup egg beater or other liquid egg substitute (equivalent of 2 eggs)
    1 teaspoon vanilla extract
    1 cup mashed bananas
    1/2 cup fage 0%
    1/2 cup pecans or other nuts chopped (optional)



Directions

Preheat oven to 350 and grease muffin tins.
Cream butter and sugar together in large bowl. Add dry ingredients. Add egg beaters and vanilla. Add mashed bananas, fage, and chopped nuts. Evenly distribute amongst muffin tins. (about 2/3 full) Bake for 45- 50 minutes or until a toothpick inserted in the middle of a muffin comes out clean. Makes 22 large muffins.
