Introduction

Old time favorite around our house! Old time favorite around our house!
Number of Servings: 4

Ingredients

    •1 can (approx. 7 ounces) salmon
    •1 egg (sometimes 2 eggs)
    •1/2 cup saltine crackers or Italian bread crumbs
    •1/2 tsp. salt
    •1/2 tsp. pepper (or lemon pepper is good too)
    •1/2 onion diced
    •1 celery rib diced
    •olive oil, enough to cover bottom of skillet with 1 pat of butter to add flavor

Directions

Remove skin and bones from salmon (optional - I leave it all); drain well. In mixing bowl, combine with egg, cracker or bread crumbs, salt, pepper, celery, and onion. Make patties about 2 inches in diameter; fry in buttered oil until brown on both sides about 10 minutes.
Sprinkle salmon patties with salt.
