Ingredients

1/2 lb red potatoes, cut into 1" chunks
1/2 lb. fresh green beans
3 cloves garlic, thinly sliced (NOT minced, or it'll just burn)
1/3 cup sliced red onion
2 tbsp. olive oil, divided
1 tsp. pesto
1/2 tsp. dijon mustard
2 tbsp. balsamic vinegar
Salt and pepper
Directions
Spread the beans, garlic, onions and potatoes on a baking sheet. Drizzle with 1 tbsp. olive oil and sprinkle with salt and pepper. Bake the veggies in a 400* oven for 10 minutes, stir, then roast another 10 minutes or until veggies are fully cooked and garlic is browned.
In a medium-sized serving bowl, whisk together the vinegar, pesto, mustard, and remaining olive oil.
When the vegetables are done, place them in the bowl with the vinegar mixture and toss thoroughly.
You can serve this warm immediately, or marinate the vegetables for 3 hours or overnight in the fridge. If you choose the fridge option, bring the salad to room temperature before serving.
Makes two servings, and can very easily be doubled or quadrupled for a crowd!
