Introduction
This is a meatless variation of Carbonara, with tomatoes and skim milk instead of cream. I also added green beans for variety. This is a "quick" version, using canned tomatoes, beans and parmesan, but you can make this with all fresh ingredients and the flavors will be more intense. Ingredients

Ronzoni Smart Taste Spaghetti, 3.5 oz (1/2 box)
Del Monte Diced Tomatoes, No Salt Added, 1 can
Del Monte Cut Green Beans No Salt Added, 1 can
Egg, fresh, 1 large
Milk, nonfat, .25 cup
Parmesan Cheese, grated, .25 cup
Butter or Olive Oil, 1 Tbsp
Directions
Boil pasta according to package directions.
Crack egg into a bowl, drain juice from tomatoes into the bowl also. Put tomatoes and drained green beans into a non-stick skillet, heat on medium while pasta is boiling.
Add milk and parmesan to egg mixture, wisk until well blended.
Remove skillet from heat. Drain pasta and add to skillet, add butter (or olive oil) and add egg mixture, stir well while pasta is still hot enough to cook the egg.
Makes 5 servings.
