This one recipe makes two loaves of zucchini bread at a time. This one recipe makes two loaves of zucchini bread at a time.
Number of Servings: 24


    Egg, fresh, 1 large
    Zucchini, 2 cup, unpealed, shredded, and drained
    Canola Oil, 1 cup
    Vanilla Extract, 1 tsp
    Granulated Sugar, 2.5 cup
    Flour, white, 3 cup
    Baking Powder, 1.5 tsp
    Cinnamon, ground, 1 tsp
    Baking Soda, 1 tsp


Beat together eggs, oil, zucchini, and sugar. Then in separate bowl mix flour, baking powder, cinnamon, and baking soda. Add the dry ingredients to the wet and mix well.
Pour into two greased (and floured if you prefer) 2/3 full. Bake at 350 F for 45-50 min.
