Ingredients

    4 lbs boneless, skinless chicken breast
    3 Tbsp. Low fat mayo
    5 oz. chicken broth (use chick broth from boiled chicken)
    2 Tsp dried garlic
    2 Tbsp fresh chopped parsley
    1 Tbsp dijon mustard
    1 stalk celery stalk chopped
    salt
    pepper

Directions

Boil chicken until just cooked. Save the broth from chicken. When chicken is cooled shred chicken and put aside. In another bowl mix the rest of your ingredients. (You may need more or less chicken broth so add this a little at a time.) Add the shredded chicken to this mixture and chill! Enjoy on low fat wraps w/ lettus and tomatoe or top your salad with it!
This should make 12-5oz servings.
