Introduction

I like to make this recipe when I want something sweet in a hurry. Vegans and non-vegans alike love these! I like to make this recipe when I want something sweet in a hurry. Vegans and non-vegans alike love these!
Number of Servings: 24

Ingredients

    1/2 cup margarine (Earth Balance)
    1 to 2 cups raw cane sugar ( I used one)
    1/2 cup soy or hemp milk
    4 tablespoon unsweetened cocoa powder or carob powder
    1/2 cup all natural organic peanut butter
    1/2 teaspoon all natural vanilla extract
    3 cups quick cooking oats

Directions

1. In a large pot, bring margarine, sugar, milk and cocoa to a boil. Stirring constantly, let boil for 1-2 minutes until mixture is completely melted. Do not over boil.

2. Take mixture off heat and stir in peanut butter and vanilla until completely melted. Stir in oats.

3. Drop teaspoonfuls of the mixture onto cookie sheets lined with wax or parchment paper and allow to cool. When cool, turn cookies over to dry the bottoms.

4. Store in an airtight plastic container in the refrigerator.
