Ingredients

2 - 6 oz salmon fillets
1- 12 oz pkg of bowtie pasta
1 large sweet onion, lrg dice
1 large red pepper, lrg dice
5 cloves of garlic, chopped
1- 10 oz pkg of chopped spinach, thawed
1 c dried mushrooms
1.5 t dried basil
.25 c Asiago cheese, grated
.25 Parmesean cheese, shredded
3 oz smoked gruyere cheese, shredded
3/4 c pasta water
3.3 oz red wine (merlot)
Directions
Start pasta in boiling water...cook according to package instructions.
Spray both olive and butter flavored Pam into a small non-stick skillet and a wok style skillet....be generous with the PAM. Place onions, garlic and peppers into large skillet, saute 3-5 minutes over medium heat.
Add spinach, mushrooms, basil and salt and pepper to taste. Add wine and ladle in hot pasta water in small measures so sauce isn't too thin. Heat thoroughly about 10 minutes.
Meanwhile, season salmon with salt and pepper or any other favorite powdered seasoning. Heat small skillet on med-high heat. Add salmon when skillet sizzles. Cook 4-6 minutes per side.
Remove salmon to plate and let rest 5 minutes. Then flake with two forks.
Drain pasta and add it to the veggie mixture. Add salmon, tossing to mix well. Add cheeses one at a time, tossing pasta lightly. Salt and pepper to taste.
