Introduction

Ingredients

1 1/2 C Sweet Corn
1 1/2 C Black Beans rinsed and drained
2 med. Tomatoes chopped
1 large bell pepper seeded and chopped
1 med. Zuchinni chopped
1/2 C chopped green onion
3 garlice cloves minced
A pinch of red pepper flaked
3 C cooked brown rice
Sea sald and black pepper to taste
3/4 C fresh lemon juice (or the juice from 2 lemons plus enough water to make 3/4 C)
2 TBSP olive oil
1/4C-1/2 C Fresh clinatro chopped
Directions
Combine all the ingredients except for the lemon juice and olive oil. Whisk the olive oil and lemon juice together. Pour over mixed ingreients and toss lightly!
