Ingredients

1 cup Quinoa, rinsed
1/4 cup pine nuts
1.75 Tbl. Extra Virgin Olive Oil
2 cloves garlic, thinly sliced
1/3 cup chopped fresh parsley( more is really good)
1/4 cup raisins
1 Tbl. fresh lemon juice (I like more)
Kosher salt and freshly ground pepper
Directions
Place quinoa in saucepan and cook over medium heat until toasted, about 2 minutes. Add 1 3/4 water (or broth) and bring to a boil. Reduce heat to medium low and simmer, covered, until the liquid is absorbed. 10-15 minutes. Remove from heat and let sit, covered, 2 minutes.
2. Meanwhile, toast the pine nuts over medium-high heat, stirring, until golden, about 3 minutes. Transfer to plate. Add olive oil and garlic to pan and cook over medium heat until golden about 2 minutes. Transfer garlic to plate and reserve oil.
3. Fluff quinoa with a fork. Add pine nuts, garlic, reserved oil, parsley, raisins and lemon juice. Season with salt and pepper and toss.
3/4 cup serving is about 300 calories.
