Ingredients

    2 cans fire roasted tomatoes
    1 cup tomato juice
    1 packet McCormic dressing mix fiesta ranch
    1 can pinto beans (drained and rinsed)
    1 can black beans (drained and rinsed)
    1 can kidney beans (drained and rinsed)
    1 can fiest corn (drained and rinsed)
    1 small onion diced and sauted in olive oil
    1 chicken breast cooked and chopped into small pieces

Directions

in a large pot mix in the tomatoes, tomato juice, beans, corn, cooked chicken breast, and fiesta ranch packet. In a small skillet saute onion in 1 tbs olive oil, then add those to the soup and cook until comes to a boil. serve. its great with brown rice, or sour cream (can use plain yogurt instead of sour cream)
