Great as a main dish or a side in a smaller portion. Have also used as a 'pasta course' in a several course meal. . .

You can use a fresh turkey sausage with this as well. . .doesn't work so well with chicken. Nutritional value will be enhanced if you use a whole wheat or 'smart Taste' pasta. . .

I've also tried with canned diced tomatoes which didn't work so well.

Ingredients

    5 plum tomatoes
    1 lb asparagus
    1/4 lb thinkly sliced prosciutto or smoked ham slice
    1 lb dry bowtie pasta
    1/4 cup olive oil
    1 cup heavy cream
    1/2 cup coarsely chopped basil
    1/4 cup freshly grated parm cheese
    1 T minced garlic

Directions

Dice tomatoes, cut ham into strips, mince garlic. Sautee garlic & ham for about 5 minutes. Add tomatoes & continue to sautee until tomatoes start to break down, add the heavy cream. Simmer. In the meantime, lightly steam asparagus & cut into 1" pieces & cook pasta according to box directions. Drain Pasta, add sauce, asparagus. Top with cheese & chopped fresh basil.
