Introduction

This is a recipe that has been handed down thur our family. I have adapted only by substituting ground turkey for the ground beef. To reduce more calories and fat your could eliminate the shredded parmesan cheese, however, I have come to love this recipe as is and I'm not ready to deduct any ingredients at this point. I have also added the sauce recipe I use it is under the name "Red Italian Sauce" This is a recipe that has been handed down thur our family. Ingredients

    2 lbs ground turkey
    1 cup plain bread crumbs
    3/4 cup parmesan cheese
    1/2 cup milk
    1/2 cup beef broth
    1/2 cup fresh minced parsley
    3 eggs beaten
    2 Tbsp oregano
    1 Tbsp garlic
    1 Tbsp kosher salt
    1 Tbsp black pepper
    2 tsp dried basil
    1 tsp red pepper flakes

Directions

Preheat oven to 450. Mix allingredients together and form 24 meatballs (medium in size) and place on cookie sheet sprayed with Pam. Bake for 25 minutes.

The turkey can be at little sticky to handle vs. beef you haven't expeirenced this before. Don't over work and try to make a perfect ball just get it in the clump and place on the cookie sheet, they don't expand out much mostly up so you do not have to leave a lot of space on the cookie sheet.

Should make 24 medium size meatballs

We have had to recently start a low fat, low cholesterol, low sodium diet (which my husband will say means low taste, but he LOVED these meatballs. I substituted 3eggs for the equivalent in egg beaters, I used low fat low sodium beef broth and used about 1/2 the salt. It was so easy and worth it. - 8/10/10
