Ingredients

    1 medium peach, petted and cut into 1/4 inch cubes
    1 mango, peeled and cut into 1/4 inch cubes
    1 medium tomato, seeded and cut into 1/4 inch cubes
    1 small chili pepper, seeded and chopped
    1/4 cup onion, chopped
    1/4 cup parsley, chopped
    1 Tbsp. fresh lime juice
    2 Tbsp. fresh orange juice
    1/4 tsp. finely grated orange (or lime) zest
    Salt and Black Pepper to taste

Directions

Makes 4 1-cup servings.
Combine all ingredients in a bowl and cool for at least 1 hour.
