29 oz. chopped tomatoes with juice
2 cups cooked barley
1 cucumber, peeled, seeded, diced
1 red bell pepper, diced
1/4 cup chopped cilantro
1/4 cup chopped green onions
1/2 ripe avocado, sliced for garnish
Directions
Combine all ingredients except avocado and chill overnight. To serve, garnish with avocado.
