Introduction

This is my grandmother's recipe for spinach pie, everyone in my family, including the people who don't like spinach, loves it. It's a great dish to bring to a pot luck, and it's really easy to suit to specific needs. I've made it gluten free by getting specific pie crusts, and vegetarian by switching to egg-substitute. Ingredients

    2 packages of frozen chopped spinach
    1/2-3/4 cup seasoned bread crumbs
    3/4 cup parmesan cheese
    1 egg
    2-3 tbsp parsley
    2-3 tbsp garlic powder
    salt and pepper to taste (at least a few tsps of each)
    2 frozen, ready to bake pie crusts

Directions

Preheat oven to 350 degrees.

On stove top, cook spinach in as little water as possible, until just thawed.
Add bread crumbs until mixture is still moist but not runny. In separate bowl beat together egg and seasonings, then add mix into the spinach, followed by the parmesan cheese. Pour into the uncooked pie crust, and cover with the second crust.
Score top of crust.

Cook until crust is golden brown.

Cut and serve as desired, makes 8 good size servings.
