Introduction

A real quick and easy lunch. I like to have a side of carrots with it. A real quick and easy lunch. I like to have a side of carrots with it.
Number of Servings: 1

Ingredients

    2 cups romaine lettuce
    1 tbsp balsamic vinegar
    1 tsp Extra Virgin Olive Oil
    .5 oz raisins
    .5 oz walnuts
    1 oz fat free cream cheese cubed
    1 fajita sized flour tortilla

Directions

Makes 1 serving

Add 2 cups romaine lettuce to a bowl
Top with walnuts and raisins
Cut cream cheese into cubes and add to salad
Lastly, top with EVOO and balsamic vinegar.
Mix all items together. I find mixing is really easy if you use a plastic bowl with a lid. Just put the lid on when you're done adding all the ingredients and shake!
Make a salad wrap with fajita sized tortilla by rolling salad into tortilla like a burrito. I can't usually fit all of my salad into the tortilla, so I just eat whats left as a regular salad.

    This was pretty good! I used spinich in place of romaine (I was out) I forgot all about the EVOO so I used seasoned salt and I spread the cream cheese on whole wheat tortillas and it was rather tasty...I'd make it again. - 9/10/11
