Ingredients


    1 1/2 cup black beans
    3 Tbs cilantro, fresh
    1/2 Cup Red Onions, Raw
    1 Jalapeno Peppers r
    2 Plum Tomato
    2 garlic cloves minced
    Sea Salt (to taste)
    2 Limes
    1 cup Quinoa

Directions

Makes 6 1-cup servings

* Bring 2 cups water to a boil in a skillet. Add 1 cup rinsed quinoa to boiling water. Let simmer 15 minutes until water is absorbed. Once water is absorbed remove from heat and let stand 2-3 minutes.
* While quinoa is cooking drain and rinse black beans.
* Chop the jalapeno, garlic, red onion, cilantro, tomato
* Combine all items except quinoa into a bowl and add sea salt, and juice of two limes. Mix well.
*Add quinoa to bowl, mix and serve.
