Introduction

Ingredients

1.5 c bread flour
.50 c wheat flour
.25 c milk
1 t baking powder
.50 t salt
.50-.75 c water
canola oil for frying
Directions
Note: I calculate for approximately 1 t of oil absorption per piece of fry bread.
Combine flour, baking powder and salt in a medium size bowl. Add milk & .25 c of water to combine. Add more water, as needed - untl you have a nice smooth dough.
Wrap the dough in plastic wrap, or cover with a dry towel & allow to rest for approximately 30 minutes.
Divide the dough into 6 pieces. Roll out each piece until it is approximately 6-8" in circumference.
Heat about 1/2 an inch of oil in a large skillet. You want it to be about 375° or almost smokey hot. Carefully slip a circle of dough into the hot oil. Gently press down with a spatula so that your dough is submerged in the oil. When the first side is browned, carefully flip & continue to cook until dough is a nice, golden brown. Remove with tongs & set aside on paper towels or move to the oven to keep warm until you are ready to serve.

Good & simple. I liked that this used wheat flour. My husband LOVES fry bread and he didn't even notice that it was a healthier recipe. I am wondering if RIMAJO could update with suggestion as to how long to cook on each side; my first one wasn't done enough on one side and the next side burned : ( - 4/6/20
