Introduction

This recipe is great on its own or cut the breasts into strips for other uses. I usually make a large batch and freeze the strips. The chicken is great in any recipe calling for cooked chicken. Chicken fahitas, pasta sauces or salads are my family's favourites.

I also freeze the marinated chicken in the ziploc bag. I buy in volume when on sale even if I don't have the time to cook it right away.

Ingredients

    2 T. Olive oil
    1 t. Chili powder
    1/2 t. paprika
    1/2 t. ground cumin
    1/2 t. black pepper
    4 chicken breasts, boneless, skinless (about 100 g each)

Directions

1. Combine marinade ingredients in a large ziploc bag and mix.
2. Add chicken. Seal bag. Massage marinade to coat the chicken. At this point, you can freeze and cook later.
3. Grill the chicken, about 10 minutes per side until the juices are clear.
4. Serves 4.

    Incredible!
    SO easy, versatile and delicious! Our grill is on the fritz, so I cooked these in a non-stick frying pan -- probably tastes even better on the grill. I squeezed a little fresh lime over the top, which added some nice acidity. Will definitely be making this recipe again! - 7/22/13

    That is a brilliant idea about freezing the chicken in the marinade....never occured to me..will be doing it from now on!!
