Ingredients

    2 cups white flour
    1.5 cups whole-wheat flour
    .5 cup brown sugar
    1 Tbs baking powder
    1.5 tsp baking soda
    .5 tsp salt
    1 tsp finely grated lemon zest
    2 and 1/3 cups buttermilk
    1 Tbs vegetable oil
    1.5 tsp vanilla
    2 cups blueberries
    1 diced peach
    3 Tbs white flour
    3 Tbs brown sugar
    3 Tbs oatmeal
    1.5 Tbs margarine or butter

Directions

Preheat oven to 400 degrees. Coat tins for 18 muffins with nonstick cooking spray, or line with paper muffin cups. Stir both flours, 1/2 cup sugar, baking powder, baking soda, salt and lemon zest together. Make a well in the center of dry ingredients. In another bowl, whisk buttermilk, oil and vanilla together. Pour buttermilk mixture into dry ingredients and stir just until blended. Fold in blueberries and diced peach. Spoon batter into the muffin tins. In a small bowl mix the oats, 3 Tbs flour, 3 Tbs sugar and margarine together. Sprinkle this topping over muffins. Bake the muffins for about 20 minutes or until golden brown. Cool for 10 minutes. Makes 18 muffins.
