Introduction

These cookies bake up thick and chewy. Using the whole white wheat flour ups the protein and fiber content and the Splenda brings down the sugar while keeping the sweetness. Ingredients

    2 cups whole white wheat flour (I used Kroger Whole White Wheat Flour)
    1/2 tsp baking soda
    1/2 tsp salt
    3/4 butter (I used "I can't believe it's not butter 50/50 all purpose blend for spreading, baking and cooking")
    1/2 splenda brown sugar blend
    1/4 splenda sugar blend
    1 extra large egg
    1 extra large egg yolk
    1 tbsp vanilla extract
    2 cups chocolate chips

Directions

Sift Together:
2 cups whole white wheat flour
1/2 tsp baking soda
1/2 tsp salt

In a separate bowl cream:
3/4 butter
1/2 splenda brown sugar blend
1/4 splenda sugar blend

Add:
1 extra large egg
1 extra large egg yolk
1 tbsp vanilla extract

To this mixture add the flour/sifted mix.

Stir in chocolate chips using a wooden spoon and drop cookie dough using a cookie scoop.

Bake cookies at 325 degrees for 7 minutes on the top rack, then 7 on the bottom rack.

*I have also made this recipe using 1c. semi sweet chips with 1/2 cup white chocolate chips and 1/2 cup dark chocolate chips for a triple chocolate cookie. You can also sub-in 1 cup of raisins for one of the cups of chocolate chips.
