Number of Servings: 1

Ingredients

    2 pounds red or gold potatoes (about 3 medium size)
    2 C plus 2 T skim milk
    garlic to taste
    1 T butter
    1 C shredded cheese
    1/4 tsp salt
    1 T cornstarch

Directions

Melt the butter in a large pot. Add the garlic and just stir around till fragrant. Add the potatoes, salt and 2 C milk and bring to a boil over med-high heat. Boil for about 10 minutes or until potatoes are tender. Remove potatoes with a slotted spoon to a casserole dish. Stir together the 2 T milk and the cornstarch in a small bowl. Whisk into the hot milk until sauce thickens. Stir in half the cheese until melted. Pour sauce over the potatoes. Top with other half of cheese. Bake at 350' till bubbly. You can finish by broiling the top until it's golden and crispy if you like it that way.
