I love sweet potatoes, especially with spices. This recipe has plenty of flavour - the spice combination is reminiscent of pumpkin pie and the maple syrup gives it added sweetness that's more interesting than sugar. Ingredients

    3 medium-to-large sweet potatoes
    1/2 tbsp butter
    1 tbsp milk (I use 1%)
    1 tbsp maple syrup (the real stuff!)
    1 tsp ground cinnamon
    1/2 tsp ground nutmeg
    1/4 tsp ground allspice

Directions

Bake the sweet potatoes in the microwave in the skin (don't forget to puncture them with a fork first!) until they are soft, about 10-15 minutes. (You can bake them in the oven instead if you prefer - it takes about 45 minutes at 400F.)

Scoop out the flesh and put it in a mixing bowl. Add butter, milk, and maple syrup and beat with mixer until well-beaten and smooth. Add cinnamon, nutmeg, and allspice and mix to blend. Serve warm - the casserole can be heated in the oven in an ovenproof dish prior to serving if it has cooled off.

Makes 6 servings.
