Ingredients

    2 lbs. raw shrimp
    3 tbsp EVOO
    1 tbsp red crushed pepper (or more if you like)
    2 garlic cloves minced
    Feta cheese

    2 large cans whole tomatoes
    1 cup of red wine
    3 tbsp of fresh chopped basil or dry

    1 lb. box vermicilli noodles

Directions

Peel shrimp and clean. In a large saucepan add the EVOO, red crushed pepper and garlic. On medium heat add the shrimp and cook until the shrimp turn pink. In a large glass baking dish, using a slotted spoon, spoon the shrimp into the baking dish. Sprinkle generously with feta cheese. Cover with foil and bake at 350 for 20 minutes. In the sauce pan with the drippings add the 2 cans of whole tomatoes and quarter them. Add the wine and basil and simmer. Make the pasta. Once the pasta is cooked, pull the shrimp out of the oven and add the sauce to the shrimp, then pour the noodles over the sauce and shrimp, mix and serve immediately. ENJOY!
