Introduction

I love black beans and edamame and this was the simplest way I could find to combine the two! It isn't a heavily flavored dish which is kind of nice, especially if you're having a really spicy meal and want something to compliment it. It isn't a heavily flavored dish which is kind of nice, especially if you're having a really spicy meal and want something to compliment it.

Ingredients

    1 can of black beans (15.5 oz)
    1.5 cup shelled, frozen edamame
    1 bell pepper (any color) chopped finely
    about 5T chopped fresh cilantro
    1tsp or less of salt

Directions

Run the beans and edamame under water in a colander to defrost the edamame a bit and rinse the beans. Let it sit in the sink to drain while you chop the pepper and cilantro. Toss all together in the colander or a bowl and then transfer to a tupperware to let sit in the fridge. The salt will help bring the flavors out, but if you're on a low salt diet just leave it out.
