Introduction

Number of Servings: 24

Ingredients

    Set #1:
    1 1/4 cups white flour
    1 1/4 cups whole wheat flour
    1 cup packed brown sugar
    2t baking soda
    2t cinnamon
    1/2t salt

    Set #2:
    2C shredded carrots
    1C shredded Roma apples
    3/4C raisins
    1/3C chopped pecans or walnuts
    1/4C flaked coconut
    1 (8oz) can crushed pineapple, drained

    Set #3:
    1/3C vegetable oil
    1/3C apple butter
    2t vanilla
    2 large eggs
    2 large egg whites

Directions

Preheat oven to 350 degrees
Combine sets 1 and 2, then stir in set 3 until just moist.
Spray muffin tins for 24 muffins.
Spoon into muffin tins.
Bake 25 mins - until lightly springs back in center
(15 mins if making mini muffins)

    Delicious! It took me forever to finely shred 2 cups of carrots, otherwise I would give this recipe 5 stars. Moist and flavorful! - 1/31/11
