I put the ingredients in as if one serving, but I usually make enough for a week to serve on a bed of brown rice with salad for work lunches - YUM!!!!! Ingredients

    1 Pound Boneless Chicken Tenders
    1 Package Old El Paso Taco Seasoning (or your favorite brand)
    1 can of Diced Tomatoes (your favorite brand will do)
    1/3 cup of Apricot or Orange preserves

Directions

wash chicken and dredge through the taco seasoning - pan fry for about 5 minutes each side until browned
add in the can of diced tomatoes and the preserves - simmer for 10 minutes

serve with brown rice
