Ingredients

    3/4 cup orange juice
    5 Tbsp All-Fruit orange marmalade
    2 Tablespoons bragg liquid aminos
    2 Tablespoons cornstarch
    1/8 teaspoon ground ginger
    1/8 teaspoon hot pepper sauce
    1/3 cup whole wheat flour
    16 oz chicken breast, cut into 1-inch cubes
    1 tablespoon olive oil
    4 green onions, cut into 1-inch pieces (or 4 Tbsp chopped onion)
    1/2 - 1 cup coarsely chopped green peppers

Directions

In a small bowl, stir together first six ingredients; set aside.

Place flour on a plate or in a bag; coat chicken, then shake off excess.

In a 10-in. skillet, heat the oil over medium-high heat. Cook chicken in three batches until tender and lightly browned on all sides. Remove chicken and keep warm; cook and stir in the green onions and green pepper for 1 minute. Stir in orange juice mixture. Bring to a boil; reduce heat and simmer for 3 minutes. Add chicken and heat through.

    This was good. I only had sweet orange marmalade and it made it a little too sweet. next time I would adjust w/either less or a bit more soy sauce. - 10/14/09
