Ingredients

    Dried Red Beans, 1 pound bag
    Smoked Turkey Sausage, 14 oz package, cut to 1 inch pieces
    Onions, raw, 1 cup, chopped
    Green Peppers (bell peppers), 1 cup, chopped)
    Celery, 5 ribs chopped
    Garlic, 3 cloves diced
    Thyme, ground, 2 tsp
    Pepper, black, 1 tsp
    Sage, ground, 1/2 tsp
    Pepper, red or cayenne, 1/8 teaspoon
    Salt, 1 tsp
    *Brown Rice, medium grain, 2 cups

Directions

1) Soak beans overnight
2) Bring beans to rolling boil. Boil 45-60 minutes. Drain
3) Sautee onions, celery, pepper, and garlic. Add to drained beans.
4) Add sausage, remaining seasonings, and just enough water to cover everything in pot..
5) Bring to a boil. Reduce heat to simmer. Cook for 2.5 hours.
6) Prepare rice. Serve beans over rice.
