Introduction

Ingredients

3 1/2 cups cooked, drained elbow Macaroni, I use Dreamfields low carb pasta
1 3/4 cup low fat sharp Cheddar cheese
1/2 cup finely chopped Onions
2 cloves garlic, minced
3 TBS chopped Parsley
1 3/4 cup low fat or fat free Cottage Cheese
1/2 cup evaporated skim milk
2 TBS Dijon Mustard
salt and pepper to taste if desired
1 slice cooked bacon
1 slice whole wheat Bread, crumbled
3 TBS grated Parmesan Cheese
I like to add herbs and other various spices to make it different.
Directions
Preheat oven to 350
In a large bowl, combine macaroni, cheddar cheese, onion and parsley
In blender or food processor combine cottage cheese, milk and mustard. Process until smooth.
Pour over macaroni mixture and mix thoroughly.
Season to taste with salt and pepper.
Turn into 2 quart casserole dish coated with non-stick spray
Crumble bacon and mix with bread crumbs and Parmesan.
Sprinkle over casserole
Bake 20 minutes
Makes 8 - 1 1/2 cup servings
