Introduction
This is my first remake of our traditional Sunday night dinner - Eggs Benedict. I've started here by substituting extra light cream cheese for the cream. It worked great and tasted even better than with cream. Next week I'll try replacing the butter with a lighter spread to bring down the calorie count even more! Ingredients

50g Butter
1 Tbsp lemon juice
2 egg yolks
1/4 cup Kraft Philadelphia Extra Light Cream Cheese
1/2 tsp wholegrain mustard
1/4 tsp salt
Directions
Serves 4
Put butter in a 500ml microwave proof jug and melt on HIGH (30 - 60 sec). Whisk in lemon juice, cream cheese, egg yolks, mustard and salt. Cook in 30 sec bursts on HIGH, whisking each time, until thick. Thin with warm water if necessary.

I was looking for a hollandaise that was traditional but less fat. This looked the most similar while cutting out about half the butter. And it turned out great! It had a strong cream cheese flavour at first but I added more lemon, some cayenne and salt/pepper. Once on the eggs and ham, perfect! - 6/24/11
