I love chicken salad but the mayo is a high caloric no-no. this chicken salad replaces the majority of the mayo with yogurt. The greek yogurt keeps the consistency of mayo and the small amount of mayo used gives the yogurt a good, almost traditional flavor. Ingredients

    12 oz Chiken Breast-cooked and chopped
    3 stalks of celery-diced
    2 T Mayo (i use regular)
    1 container(appox 5oz) of plain nonfat greek yogurt
    1/2 C walnut pieces
    1/3 C craisin dried cranberries
    4-Thin buns 100 calorie

Directions

Mix all ingredients together and serve on thin buns. I toast my thin bun first. Makes 4 sandwiches.

You could stretch to 6 sandwiches, if you like, for fewer calories.

For my chicken I boil my chicken in water with Ms dash, dried onion, dried garlic, celery seed and pepper. (I make it this way so I dont get all the sodium from canned chicken but for simplicity canned Nature Valley chicken works well too)
