Introduction

The original idea came from The Hungry Girl. I tweaked it a little bit, in part to give it more nutritional value, and in part because I don't do Splenda (or similar sweeteners). Ingredients

    1 small banana- mashed (about 1/4 cup)
    3 Tbsp liquid egg whites (from the carton)
    1 Tbsp vanilla almond milk
    1/4 tsp baking powder
    1/4 tsp vanilla
    dash of cinnamon
    1/8 cup whole wheat flour
    1/8 cup ground Fiber One Bran cereal

Directions

Mash banana with a fork.
Add liquid ingredients and mix.
Add baking powder, flour, Fiber One, and cinnamon. Mix thoroughly.
Spray (with non stick spray) and preheat skillet over medium heat (I do this while mixing ingredients). Pour mix into skillet to desired size of pancake (I use the tablespoon, it gives me 5 pancakes). Cook the first side about 3 minutes, until browned and sides of pancake are firming up. Gently flip and cook the other side till cooked through- another 2-3 minutes.
Serve as desired: top with cinnamon, powdered sugar, syrup, chocolate syrup, or whipped topping.
