Introduction

I am from the coast and now live in the mid west. So I had learn to prepare seafood that isn't from the sea :) This is a great alternative to frying your catfish! Number of Servings: 15

Ingredients

    5 lb Bag of Catfish Nuggets.
    4 medium Onions
    2 Med to Large Green Peppers
    10 Cloves of Garlic, sliced or chopped (Use less if you not a huge garlic fan)
    5 Medium Tomatoes (canned may be substituted)
    3 Limes

Directions

Combine all Ingredients in a bowel and toss. (except Lime) Place in 5 separate aluminum foil packets. Zest the lime (1 is sufficient for zesting) and sprinkle zest through out packets on top of other ingredients. Then slice the limes thin to add to the packets. (Lime can also be saved to squeeze on when the dish is done if you are not a fan of cooked citrus) Grill on low heat for 30 min, or until fish flakes easily.
For extra flavor, any low sodium seasoning blend can be added. Other additions are fresh hot peppers, black pepper, garlic or onion powder, chives, fresh or dried oregano or rosemary, etc.
Other variations: Exclude tomatoes and add orange, lemon, and pineapple. You can also use celery, carrots, etc to boost the veggie content.
We like this with asparagus and a fresh veggie or fruit salad.
A 5 lb bag makes approx 15 servings. Each packet should contain approx 1 lb of fish and is 3 servings.
Leftovers make a great stew.
