Introduction

Everyone loves this cake. I make it healthier by cutting the fat with applesauce. I personally do not like to use the artificial sugars; but you could further reduce calories that way.
Also, the original recipe calls for just a half a cup of chocolate chips; but I did the nutritional info for a whole cup sprinkled over the top.

Number of Servings: 18

Ingredients

    1/4 cup butter
    3/4 cup unsweetened applesauce
    1/2 cup brown sugar
    1/2 cup granulated sugar
    2 eggs
    1 tsp. vanilla
    1/2 tsp. baking powder
    1 tsp. baking soda
    1 tsp. ground cinnamon (optional)
    4 TBSP. unsweetened cocoa powder
    1/2 cup buttermilk
    2 cups grated zucchini
    2 1/2 cups unbleached flour
    1 cup chocolate chips

Directions

Cream together the first 6 ingredients.
Blend in dry ingredients alternating with the buttermilk until all blended together. Batter is somewhat thick.
Fold in grated zucchini.
Pour into greased 9 x 13 pan.
Sprinkle with chocolate chips.
Bake at 325 for 40 to 50 minutes.
