Ingredients

8 to 9 medium size sweet potato
peeled & cubed
3 Tbsp. olive oil
1 1/2 Tbsp. curry
1 1/2 Tbsp. tumeric
1 1/2 Tbsp. garlic powder
1 1/2 Tbsp. cumin
1 1/2 tsp. cayenne pepper
1 1/2 tsp. salt - less or more to taste
3 Tbsp. dried parsley
Directions
1.) Pre-heat oven to 425 - Fahrenheit.
2.) Cut sweet potatoes into small cubes.
3.) Add potatoes to a large mixing bowl and cover with the olive oil.
4.) After potatoes are completely coated with the olive oil, add all the spices and parsley.
5.) Make sure the potatoes are completely coated with the spices.
6.) Empty potatoes into a 9 X 12 baking dish and bake for 45 min.
Makes 16 - 1/2 cup servings
