Introduction

The Cheese used in this recipe is a new non-dairy cheese. It is really good and creamy. It melts great. I know that Whole foods market uses it in their deli foods. Ingredients

    9 oz Chopped cooked chicken breast
    2 Cups Dalya non-dairy cheese shred
    1/4 cup chopped/sliced black olives
    1/4 cup chopped onion
    8 non-fat corn tortillas
    3 cups Green chile Enchilada Sauce



Directions

Dip tortilla's in enchilada sauce and lay in bottom of 9x9 pan.
Layer chicken, onions, and olives evenly. Cover with another layer of tortilla's dipped in enchilada Sauce. Do Second layer the same as the first. Put left over cheese on top with a little bit of the onions and Olives. Pour the rest of the enchilada sauce evenly over the top.
Bake for 30 min at 350 Degrees
