Introduction

Tasty way to use up leftover ham. Tasty way to use up leftover ham.
Number of Servings: 6

Ingredients

    400 grams of chopped/diced leftover ham (approx. 4 cups)
    1 large red potato (300 grams), diced
    12 cups fresh or frozen string beans
    2 cups leftover liquid from the baked ham
    Salt and Pepper optional

Directions

Put all ingredients in a dutch oven and add enough water until you can begin to see liquid through the ingredients. Season with salt and pepper to taste. Bring to a boil and reduce to medium heat and cook for 30 minutes or until potato and beans are done.

Makes 12 servings (about 2 cups each) as a meal or 24 servings as a soup course.

    I turned this into a crockpot recipe by quartering the red potatoes (skins on) and placing the ingredients in the crockpot mixed w/ a can of 98 percent fat free cream of mushroom soup. We're calling this twist 'Hungarian Flag Dinner" because it reminds me of a dish my Hungarian G-ma used to make. - 8/16/07
