Ingredients

1 1/2 c. crushed graham crackers (about 8)
1/4 c. sugar
1/3 c. melted butter
8 oz. neufchatel cheese
1/4 c. sugar
2 tbsp milk
1 1/2 c. cool whip (light)
2 small pkg vanilla instant pudding (sugar-free) or 1 large pkg (to make 8 servings)
3 1/2 c. milk
Directions
Makes 13 X9 inch pan (20 2 inch servings).
Mix together graham crackers, 1/3 cup melted butter, and 1/4 cup sugar. Press into pan and refrigerate for 15 minutes.
Using electric mixer, beat neufchatel cheese, 1/4 cup sugar, and 2 Tbsp milk until smooth. Fold in 1 1/2 c. cool-whip (24 tbsp). Spread over graham cracker crust.
Add 2 1/2 cups raspberries over top.
With wire whisk, mix 8 servings vanilla instant pudding with 3 1/2 cups milk. (2 small boxes, or one large box.) Pour over berries.
Keep refrigerated. Best when served within 24 hours because graham cracker crust can get soggy.
I used 1% milk and regular (not reduced-fat) graham crackers, and regular butter. You can shave even more calories off this recipe by substituting nonfat milk, reduced fat graham crackers, and reduced fat margarine. Enjoy!
