Ingredients

20 oz pkg Lean Ground Turkey....
2 Cups White LG Instant Rice....
1 Cup Reduced Fat Shredded Mild Cheddar Cheese....
2 Cups Tomato Juice....
1/2 cup Onions (sliced)....
1 cup Green Peppers (Sliced,diced whichever you prefer)....
1/2 cup (or about 10-12 strips) Yellow Peppers (Sliced,diced whichever you prefer)....
1/2 cup Red Peppers (Sliced,diced whichever you prefer)....
1 TBSP Garlic Powder....
1 TSP Cayenne Pepper....
1 TSP Salt....
1 TBSP Black Pepper....
1 TSP Hot Pepper Sauce (Like Franks or you could probably use Tabasco too)....
*MAKES 8-1 cup Servings*
Directions
Use a large skillet that has a lid.
Use Medium Heat.
Add Turkey,Onions,Pepper,Salt,Garlic Powder,Cayenne,Hot Sauce.
Cook uncovered Until Turkey is cooked through (no pink).
Add Rice and Tomato Juice.
Cover with Lid and cook until Rice has cooked and is plump and soft and the Juice has absorbed into the meat & rice.
Remove Lid.
Add Cheese and Stir (it should melt upon contact & mixing)
Add additonal cayenne and black pepper if you prefer.
This dish is spicy but to me I find it mild. I am a lover of spice though so experiment with the spices if you don't care for hot.
