Ingredients

    (2) Chicken Thighs - frozen or defrosted
    (2) Chicken Breasts - frozen or defrosted
    Salt - to taste
    Pepper - to taste
    (2) tsp Garlic Powder
    Onion - medium or 1 tsp Onion Powder
    (2) Celery stalks - cut in half
    (3) cups Chicken Broth
    Water to cover
    (1) cup Bisquick
    (1 1/2) cup Milk



Directions

Boil together - Chicken thighs and breastsm garlic powder, onion or onion powder, celery, chicken broth and water - until chicken and veggies are tender.

Remove chicken and celery from broth and allow to cool. Allow broth to boil.

Dumplings: Mix Bisquick and 2/3 cup milk in separate bowl. Roll out on floured surface to 1/8 inch think - cut to squares or strips.

Shred cooled chicken or cut into bite size pieces - chop celery. Add chicken and celery back to broth.

Add dumplings back to broth - stir continuously to prevent sticking. Boil for 10-12 minutes until dumplings plump to double or more their size. Add 2/3 cup milk to pot and bring to temperature.

Makes (5) adult portions.

Alternates - drop dumplings: Do not roll dumplings flat, add milk after chicken and celery are added back to the pot. Drop dumplings on top with a spoon. Cover and let cook until dumplings are done - about 10-15 minutes.

Alternate - Crock pot method: Cook chicken with broth and veggies in crock pot on LOW for 6-8 hrs - chicken will be VERY tender. Transfer broth to pot and continue recipe as listed above. This saves 40 minutes of cooking time at the very beginning.
