Introduction
This nearly fat-free, gluten free cake is delicious as breakfast, a snack or served with a savory soup. May add raisins if desired. Serves a large group! Ingredients

-3 1/2 Cups GF flour mixture, (such as the one that follows:)
-2 1/2 Cups Rice flour
- 3/4 Cup Potato Starch
- 1/4 Cup tapioca flour/starch
-1/4 Cup unsweetened Cocoa Powder (opt.)
-2 tsp. Xanthan Gum
-2 tsp. salt
-1 T. Baking Soda
-1 T. Baking Powder
-1/2 Cup Sugar (or granulated cane juice)
-2 tsp. Cider Vinegar
-1 1/2 Cups Water
-1 1/2 Cups Plain, Low-fat Yogurt (such as Stoneyfield brand)
-3/4 Cup dark molasses (if using black-strap, increase sugar)
-1/2 Cup applesauce (unsweetened)
-1 large egg
Directions
-Preheat Oven to 350 degrees
- In large mixing bowl, whisk together dry ingredients
- In smaller mixing bowl, whisk together wet ingredients
-Add wet ingredients to dry, and stir until no traces of flour remain.
-Pour batter into ungreased "lasagna size" roasting pan and bake for approx 30 minutes, or until tests done. DO NOT over-bake.
-Dust with powdered sugar, if desired and serve.
Makes 25 2x2 in. pieces.
