Ingredients

    Vinaigrette:

    1 T. balsamic Vinegar
    3 T. Extra Virgin Olive Oil
    1/2 packet NOW Stevia
    1/4 t. salt
    1/4 t. cracked black pepper

    Salad:

    1 small (or 1/2 medium) jicama, peeled
    1 medium tart (e.g. Granny Smith) apple, cored
    1/2 c. blueberries, frozen or fresh

Directions

Prepare vinaigrette: combine vinegar, olive oil, stevia, salt and pepper. whisk until combined.

Prepare salad:
Julienne jicama
Julienne apple
add blueberries

Combine salad and vinaigrette and refrigerate until cold, about an hour.
